Ingredients

3 cups Rice Krispies cereal

1 cup peanut butter (or almond butter)

½ cup honey or corn syrup

1 tsp vanilla extract

1½ cups semi-sweet chocolate chips

Optional: sprinkles, crushed nuts, or sea salt for topping


Instructions

In a saucepan over low heat, melt peanut butter and honey together until smooth. Remove from heat and stir in vanilla.

Add Rice Krispies and mix until fully coated.

Let mixture cool slightly, then roll into 1-inch balls.

Melt chocolate chips in the microwave or a double boiler until smooth.

Dip each ball into the chocolate and place on parchment-lined tray. Add toppings if using.

Chill in the fridge for 30 minutes until set. Enjoy!
