Ingredients
For the dough:
• 2 ¼ tsp (1 packet) active dry yeast
• ¼ cup warm milk (dairy or plant-based, 105–110°F / 40–43°C)
• 1 tbsp sugar
• ½ cup warm water
• ⅓ cup melted butter or coconut oil
• 1 egg
• 1 tsp vanilla extract
• 3 ½ cups all-purpose flour (plus extra for dusting)
• ½ tsp salt
For the filling:
• ¼ cup brown sugar or coconut sugar
• 1 ½ tsp ground cinnamon
• 2 tbsp melted butter or coconut oil
For the icing (optional):
• ½ cup powdered sugar (or erythritol)
• 1–2 tbsp milk or almond milk
• ½ tsp vanilla extract
• Red or green food-safe gel (optional, for holiday colors)
Instructions
- Activate yeast: In a bowl, mix warm milk, sugar, and warm water. Sprinkle yeast on top. Let sit 5–10 minutes until foamy.
- In a large bowl or stand mixer, combine yeast mixture, melted butter, egg, and vanilla.
- Gradually add flour and salt, mixing until a soft dough forms. Knead 3–5 minutes by hand or mixer until smooth and elastic.
- Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 hour or until doubled.
- Roll dough into a 9×12-inch rectangle on a floured surface.
- Brush with melted butter. Mix sugar and cinnamon; sprinkle evenly over dough.
- Roll up tightly from the long side. Pinch seam to seal.
- Cut into 12 equal slices using dental floss or a sharp knife.
- Place rolls in a greased 9×13-inch pan. Cover and let rise 30 minutes.
- Preheat oven to 350°F (175°C). Bake 20–25 minutes, until golden.
- Cool slightly, then drizzle with icing. Use red or green food coloring for a merry touch!
