Christmas Rocky Road – A Festive No-Bake Treat

Ingredients

• 1 cup dark or semi-sweet chocolate chips (or dairy-free)
• ½ cup white chocolate chips (for snowy contrast)
• 2 tbsp coconut oil or butter (to help chocolate set smoothly)
• 2 cups mini marshmallows
• ½ cup roasted peanuts or chopped almonds
• ¼ cup dried cranberries (for red “jewels”)
• ¼ cup pretzel pieces (for salty crunch)
• ¼ cup Christmas-themed sprinkles (red, green, white)
• Optional: crushed candy canes or peppermint extract for a wintry touch


Instructions

  1. Line an 8×8-inch pan with parchment paper or foil.
  2. In a heatproof bowl, combine dark chocolate chips, white chocolate chips, and coconut oil.
  3. Melt in the microwave in 20-second bursts, stirring between each, until smooth and glossy.
  4. Fold in mini marshmallows, peanuts, cranberries, pretzels, and sprinkles. Mix gently to avoid crushing marshmallows.
  5. Pour mixture into the prepared pan and press down lightly with a spatula.
  6. Sprinkle extra sprinkles or crushed candy canes on top for a festive finish.
  7. Chill in the refrigerator for 1–2 hours, until firm.
  8. Lift out using the parchment and cut into squares.
