Ingredients
β’ 3 lbs sweet potatoes, peeled and cubed β’ 3 tbsp olive oil β’ 3 tbsp maple syrup β’ 1 tsp cinnamon β’ Β½ tsp nutmeg β’ ΒΌ tsp ginger β’ Β½ tsp salt β’ ΒΌ tsp black pepper β’ 2 tbsp butter, melted β’ 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 425Β°F
- Toss sweet potato cubes with olive oil
- Spread on baking sheet in single layer
- Roast 25-30 minutes until tender and slightly caramelized
- In small bowl, mix maple syrup, cinnamon, nutmeg, and ginger
- Transfer roasted sweet potatoes to large bowl
- Add maple spice mixture and toss to coat
- Add salt, pepper, and melted butter
- Toss gently to combine
- Roast 10 minutes more until glaze is sticky
- Garnish with fresh parsley
- Serve hot
