Ingredients

β€’ 3 lbs sweet potatoes, peeled and cubed β€’ 3 tbsp olive oil β€’ 3 tbsp maple syrup β€’ 1 tsp cinnamon β€’ Β½ tsp nutmeg β€’ ΒΌ tsp ginger β€’ Β½ tsp salt β€’ ΒΌ tsp black pepper β€’ 2 tbsp butter, melted β€’ 2 tbsp fresh parsley, chopped


Instructions

  1. Preheat oven to 425Β°F
  2. Toss sweet potato cubes with olive oil
  3. Spread on baking sheet in single layer
  4. Roast 25-30 minutes until tender and slightly caramelized
  5. In small bowl, mix maple syrup, cinnamon, nutmeg, and ginger
  6. Transfer roasted sweet potatoes to large bowl
  7. Add maple spice mixture and toss to coat
  8. Add salt, pepper, and melted butter
  9. Toss gently to combine
  10. Roast 10 minutes more until glaze is sticky
  11. Garnish with fresh parsley
  12. Serve hot
