Ingredients

• 8 slices sandwich bread (white, brioche, or whole grain)
• 4 oz cream cheese, softened (or dairy-free alternative)
• 2 tbsp brown sugar or coconut sugar
• 1 tsp cinnamon
• 2 eggs
• ¼ cup milk (dairy or plant-based)
• 1 tsp vanilla extract
• 1 tbsp melted butter or coconut oil (for cooking)
• Optional toppings: maple syrup, powdered sugar, chopped pecans


Instructions

  1. Make the filling: In a bowl, mix cream cheese, brown sugar, and cinnamon until smooth.
  2. Flatten each bread slice with a rolling pin to make it thin and flexible.
  3. Spread a thin layer of cinnamon filling over each slice, leaving a small border around the edges.
  4. Roll up each slice tightly from the short end, like a jelly roll. Secure with a toothpick if needed.
  5. In a shallow bowl, whisk eggs, milk, and vanilla until well blended.
  6. Dip each roll-up into the egg mixture, coating all sides. Let soak 10–15 seconds per side.
  7. Heat a skillet or griddle over medium heat. Add melted butter.
  8. Cook roll-ups 2–3 minutes per side, turning gently, until golden brown and heated through.
  9. Remove toothpicks, slice in half diagonally, and serve warm.
  10. Drizzle with maple syrup, dust with powdered sugar, or sprinkle with nuts for extra flair!
