Ingredients
• 8 slices sandwich bread (white, brioche, or whole grain)
• 4 oz cream cheese, softened (or dairy-free alternative)
• 2 tbsp brown sugar or coconut sugar
• 1 tsp cinnamon
• 2 eggs
• ¼ cup milk (dairy or plant-based)
• 1 tsp vanilla extract
• 1 tbsp melted butter or coconut oil (for cooking)
• Optional toppings: maple syrup, powdered sugar, chopped pecans
Instructions
- Make the filling: In a bowl, mix cream cheese, brown sugar, and cinnamon until smooth.
- Flatten each bread slice with a rolling pin to make it thin and flexible.
- Spread a thin layer of cinnamon filling over each slice, leaving a small border around the edges.
- Roll up each slice tightly from the short end, like a jelly roll. Secure with a toothpick if needed.
- In a shallow bowl, whisk eggs, milk, and vanilla until well blended.
- Dip each roll-up into the egg mixture, coating all sides. Let soak 10–15 seconds per side.
- Heat a skillet or griddle over medium heat. Add melted butter.
- Cook roll-ups 2–3 minutes per side, turning gently, until golden brown and heated through.
- Remove toothpicks, slice in half diagonally, and serve warm.
- Drizzle with maple syrup, dust with powdered sugar, or sprinkle with nuts for extra flair!
