Sweet, fluffy muffins with a crisp cinnamon-sugar coating—like breakfast and dessert in one!
Ingredients
For the Muffins:
4 cups cubed day-old bread (French or brioche works best)
4 eggs
1 cup milk
½ cup heavy cream (or more milk)
¼ cup brown sugar
1 tsp vanilla extract
1 tsp ground cinnamon
¼ tsp salt
Cinnamon Sugar Topping:
¼ cup granulated sugar
1 tsp cinnamon
2 tbsp melted butter
Instructions
Preheat oven to 350°F (175°C) and grease a muffin tin well.
In a large bowl, whisk together eggs, milk, cream, brown sugar, vanilla, cinnamon, and salt.
Add bread cubes and stir to coat evenly. Let soak for 5–10 minutes.
Spoon mixture into muffin cups, pressing down lightly.
Bake 25–30 minutes, until golden and set. Cool slightly.
Mix cinnamon and sugar. Brush muffins with melted butter and roll in cinnamon sugar.
