Soft, fluffy muffins with a sweet cinnamon swirl in every bite!
Ingredients
For the Muffins:
2 cups all-purpose flour
½ cup granulated sugar
1 tbsp baking powder
½ tsp salt
1 cup milk
⅓ cup vegetable oil
1 egg
1 tsp vanilla extract
For the Cinnamon Swirl:
⅓ cup brown sugar
1½ tsp ground cinnamon
2 tbsp melted butter
Optional Glaze:
½ cup powdered sugar + 1–2 tsp milk
Instructions
Preheat oven to 375°F (190°C). Line or grease a muffin tin.
In a bowl, mix flour, sugar, baking powder, and salt.
In another bowl, whisk milk, oil, egg, and vanilla. Combine wet and dry ingredients—do not overmix.
Fill muffin cups halfway with batter. Add a spoonful of cinnamon swirl, then top with more batter. Swirl lightly with a toothpick.
Bake 18–20 minutes until golden and a toothpick comes out clean.
Cool and drizzle with glaze if desired.
