Ingredients

• 1 cup all-purpose flour (or gluten-free 1:1 blend)
• ½ tsp baking powder
• ¼ tsp salt
• ½ cup granulated sugar
• ¼ cup brown sugar
• ⅓ cup vegetable oil or melted butter
• 1 egg
• 1 tsp vanilla extract
• ½ cup thawed Cool Whip (or homemade whipped cream)


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, mix sugars, oil, egg, vanilla, and Cool Whip until smooth.
  4. Gradually add dry ingredients, mixing until just combined.
  5. Scoop tablespoon-sized balls of dough and place on trays (they spread slightly).
  6. Bake 9–11 minutes, until edges are lightly golden.
  7. Let cool on the tray 5 minutes—they’ll firm up as they cool. Then transfer to a wire rack.

These stay soft and tender thanks to the whipped topping!
