  • ¼ cup (60ml) pure maple syrup, honey, or sugar-free syrup (like monk fruit blend)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1–2 tbsp melted dark chocolate (70%+) for extra richness
  • Optional toppings: fresh berries, chopped nuts, whipped cream, or cacao nibs

Instructions

  1. Blend cottage cheese: In a high-speed blender or food processor, blend cottage cheese until completely smooth (~1–2 minutes). Scrape down sides as needed.
  2. Add remaining ingredients: Add cocoa powder, sweetener, vanilla, salt, and melted chocolate (if using). Blend until thick, glossy, and mousse-like (~1–2 min).
  3. Chill (optional but recommended): Transfer to serving bowls or glasses. Refrigerate at least 30 minutes to firm up and enhance flavor.
  4. Serve topped with berries, nuts, or a dollop of whipped cream.
