Moist banana bread with a rich, creamy cheesecake swirl in the middle!
Ingredients
For the Banana Bread:
2 ripe bananas, mashed
2 eggs
½ cup maple syrup or brown sugar
¼ cup melted coconut oil or butter
1 tsp vanilla extract
1½ cups flour (all-purpose or whole wheat)
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
½ tsp ground cinnamon
For the Cream Cheese Filling:
8 oz cream cheese, softened
¼ cup powdered sugar
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a bowl, mix mashed bananas, eggs, maple syrup, melted coconut oil (or butter), and vanilla.
In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
Add dry ingredients to wet ingredients and stir until just combined.
In a separate bowl, beat together cream cheese, powdered sugar, and vanilla until smooth.
Pour half of the banana bread batter into the pan, then spread the cream cheese filling on top.
Add the remaining banana bread batter and swirl with a knife to create a marbled effect.
Bake for 55–60 minutes, until a toothpick comes out clean.
Cool for 10 minutes in the pan, then transfer to a wire rack.
