Ingredients
• 2 cups peeled & finely diced apples (Granny Smith or Honeycrisp)
• 2 tbsp unsalted butter
• 2 tbsp brown sugar
• 1 tsp ground cinnamon
• ¼ tsp nutmeg
• 1 tbsp lemon juice
• 12 egg roll wrappers (or spring roll wrappers for lighter crunch)
• 1 tbsp water (for sealing)
• Oil for frying (or cooking spray for baking)
For serving:
• Powdered sugar
• Caramel or vanilla ice cream (optional)
Instructions
- Filling: In a skillet, melt butter over medium heat. Add apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook 6–8 min until apples are tender and liquid evaporates. Cool completely.
- Assemble: Place 2–3 tbsp filling near one corner of an egg roll wrapper (diamond orientation). Fold sides in, then roll tightly toward the opposite corner, sealing edge with water.
- Cook (choose one):
- Fry: Heat 2″ oil to 350°F (175°C). Fry 2–3 rolls at a time 2–3 min until deep golden. Drain on paper towels.
- Bake: Place seam-side down on parchment-lined sheet. Spray lightly with oil. Bake at 425°F (220°C) 12–15 min, flipping halfway.
- Dust generously with powdered sugar while warm. Serve with caramel drizzle or ice cream if desired!
