Description
Crunchy, creamy, and chocolatey layers roll into a no-bake dream treat.
Ingredients
1 cup natural peanut butter
1/4 cup maple syrup or honey
1/4 cup coconut oil, melted
2 cups crispy rice cereal
1 cup dark or milk chocolate chips
1/2 tsp vanilla extract
Pinch of salt
Instructions
In a large bowl, mix peanut butter, maple syrup, coconut oil, vanilla, and salt until smooth.
Stir in crispy rice cereal until well coated.
Transfer mixture onto parchment paper and shape into a log.
Chill in the freezer for 15–20 minutes until firm.
Meanwhile, melt chocolate chips in a heatproof bowl over a pot of simmering water or in the microwave.
Pour melted chocolate over the chilled log and smooth it out evenly.
Return to freezer for another 10–15 minutes to set.
Slice into rounds and enjoy chilled or at room temperature.
