Ingredients
For the Crust:
1 cup graham cracker crumbs
6 tbsp unsalted butter, melted
2 tbsp sugar
For the Chocolate Layer:
1 cup dark chocolate chips (or semi-sweet)
1/4 cup heavy cream or coconut cream
1 tbsp honey or maple syrup
For the Raspberry Layer:
1 cup fresh or frozen raspberries
2 tbsp honey or maple syrup
1 tsp lemon juice
1 tsp agar-agar powder or cornstarch (to thicken)
Instructions
In a bowl, mix crust ingredients and press into the bottom of a lined 8×8-inch pan. Chill while preparing other layers.
For the chocolate layer: Melt chocolate chips with cream and honey until smooth. Spread evenly over the crust. Chill for 10 minutes.
For the raspberry layer: In a small saucepan, combine raspberries, honey, lemon juice, and agar-agar (or cornstarch). Cook over medium heat, stirring constantly, until thickened. Let cool slightly.
Pour raspberry mixture over the chocolate layer. Smooth the top and chill for at least 1–2 hours until set.
Slice into bars and serve chilled for the best texture.
