Ingredients
• 3 cups all-purpose flour • 2 cups granulated sugar • 1 cup butter, softened • 4 eggs • 1 cup buttermilk • 1 tsp vanilla extract • 2 tsp baking powder • ½ tsp salt
FOR CARAMEL FILLING: • 1 cup brown sugar • ½ cup butter • ¼ cup heavy cream • 2 tbsp corn syrup
FOR CARAMEL FROSTING: • 1 cup butter, softened • 4 cups powdered sugar • ¼ cup caramel sauce • 2-3 tbsp heavy cream • 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F
- Grease and flour three 9-inch round cake pans
- Cream butter and sugar until fluffy
- Add eggs one at a time, beating well
- Mix in vanilla extract
- Combine flour, baking powder, and salt
- Alternate adding flour mixture and buttermilk
- Divide batter between pans
- Bake 25-30 minutes until toothpick comes clean
- Cool 10 minutes in pans, then turn out
- For caramel: heat brown sugar, butter, cream, and corn syrup
- Boil 2 minutes, cool completely
- Beat butter for frosting until creamy
- Gradually add powdered sugar, caramel sauce, and cream
- Add vanilla and beat until smooth
- Layer cake with caramel filling and frosting
