Ingredients
For the bars:
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• ¾ cup granulated sugar
• ½ cup brown sugar
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp salt
• 3 large eggs
• ½ cup vegetable oil or melted coconut oil
• 1 tsp vanilla extract
• 2 cups grated carrots (about 3–4 medium)
• ½ cup chopped walnuts (plus extra for topping)
• ½ cup raisins or crushed pineapple (optional, for moisture)
For the cream cheese frosting:
• 4 oz cream cheese, softened (or dairy-free alternative)
• ¼ cup (½ stick) unsalted butter, softened
• 1 ½ cups powdered sugar
• ½ tsp vanilla extract
• 1–2 tbsp milk or cream (to thin)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch pan or line with parchment paper.
- In a bowl, whisk together flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, then mix in oil and vanilla. Gradually add dry ingredients, mixing until just combined.
- Fold in grated carrots, walnuts, and raisins (if using).
- Pour batter into the pan and spread evenly.
- Bake 25–30 minutes, until a toothpick comes out clean. Let cool completely.
Make the frosting:
7. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Whip in milk 1 tsp at a time until fluffy.
8. Spread over cooled bars. Sprinkle with extra chopped walnuts.
