Decadent Carrot Cake Bars 🥕✨

Ingredients

For the bars:
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• ¾ cup granulated sugar
• ½ cup brown sugar
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp salt
• 3 large eggs
• ½ cup vegetable oil or melted coconut oil
• 1 tsp vanilla extract
• 2 cups grated carrots (about 3–4 medium)
• ½ cup chopped walnuts (plus extra for topping)
• ½ cup raisins or crushed pineapple (optional, for moisture)

For the cream cheese frosting:
• 4 oz cream cheese, softened (or dairy-free alternative)
• ¼ cup (½ stick) unsalted butter, softened
• 1 ½ cups powdered sugar
• ½ tsp vanilla extract
• 1–2 tbsp milk or cream (to thin)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan or line with parchment paper.
  2. In a bowl, whisk together flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, then mix in oil and vanilla. Gradually add dry ingredients, mixing until just combined.
  4. Fold in grated carrots, walnuts, and raisins (if using).
  5. Pour batter into the pan and spread evenly.
  6. Bake 25–30 minutes, until a toothpick comes out clean. Let cool completely.

Make the frosting:
7. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Whip in milk 1 tsp at a time until fluffy.
8. Spread over cooled bars. Sprinkle with extra chopped walnuts.

✨ Store in the fridge for extra-dense texture!
