Double Chocolate Zucchini Bread: A Moist, Decadent Twist on a Garden Classic

Ingredients

• 2 cups all-purpose flour • ¾ cup cocoa powder • 1½ cups granulated sugar • ½ cup vegetable oil • 3 eggs • 2 cups grated zucchini • 1 cup buttermilk • 2 tsp vanilla extract • 1 tsp baking soda • ½ tsp salt • 1 cup chocolate chips • ½ cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350°F
  2. Grease two 9×5 inch loaf pans
  3. Mix flour, cocoa powder, sugar, baking soda, and salt
  4. In separate bowl, whisk oil, eggs, zucchini, buttermilk, vanilla
  5. Combine wet and dry ingredients until just mixed
  6. Fold in chocolate chips and walnuts
  7. Pour into prepared pans
  8. Bake 50-60 minutes until toothpick comes clean
  9. Cool 15 minutes in pans
  10. Turn out onto wire racks
  11. Cool completely before slicing
