• 1 box (15.25 oz) spice cake mix (or yellow cake mix + 1 tsp pumpkin pie spice)
• 1 can (15 oz) pumpkin puree (unsweetened)
Optional for serving:
• Powdered sugar or cinnamon for dusting
• Cream cheese spread or whipped butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, combine cake mix and pumpkin puree. Stir until smooth and fully blended (don’t overmix).
- Pour batter into the loaf pan and smooth the top.
- Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely (it firms as it cools).
- Slice and serve as-is, or dust with powdered sugar for a sweet finish!
