Ingredients

• 1 box (15.25 oz) spice cake mix (or yellow cake mix + 1 tsp pumpkin pie spice)
• 1 can (15 oz) pumpkin puree (unsweetened)

Optional for serving:
• Powdered sugar or cinnamon for dusting
• Cream cheese spread or whipped butter


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, combine cake mix and pumpkin puree. Stir until smooth and fully blended (don’t overmix).
  3. Pour batter into the loaf pan and smooth the top.
  4. Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
  5. Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely (it firms as it cools).
  6. Slice and serve as-is, or dust with powdered sugar for a sweet finish!
