Soft, fluffy, and bursting with sweet cherry goodness in every bite!
Ingredients
1½ cups all-purpose flour
½ cup sugar
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 egg
½ cup milk
⅓ cup vegetable oil
1 tsp vanilla extract
1 cup maraschino cherries, drained and chopped
½ cup white chocolate chips (optional)
Instructions
Preheat oven to 375°F (190°C). Line or grease a muffin tin.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, beat egg, milk, oil, and vanilla extract until smooth.
Add wet ingredients to dry ingredients, stirring gently until just combined.
Fold in chopped cherries and white chocolate chips (if using).
Spoon batter into muffin cups, filling each about ¾ full.
Bake for 18–22 minutes, or until golden and a toothpick comes out clean.
Let cool for a few minutes, then enjoy!
