Ingredients
Bread:
• 1½ cups all-purpose flour (or 1¼ cups almond flour + 2 tbsp coconut flour for keto)
• ¾ cup granulated sugar (or monk fruit sweetener blend)
• 1½ tsp baking powder
• ¼ tsp salt
• ½ cup (1 stick) unsalted butter, melted & cooled
• 2 large eggs
• ½ cup milk (or unsweetened almond milk)
• 1½ tsp vanilla extract
• ⅓ cup rainbow jimmies (“non-bleeding” sprinkles—avoid nonpareils or they’ll tint the batter)
Cream Cheese Glaze:
• 4 oz cream cheese, softened
• 2 tbsp butter, softened
• 1 cup powdered sugar (or powdered erythritol for keto)
• 1–2 tsp milk
• ½ tsp vanilla extract
• Optional: extra sprinkles for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan; line with parchment.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- In another bowl, whisk melted butter, eggs, milk, and vanilla. Pour into dry ingredients; stir until just combined. Fold in sprinkles (don’t overmix—keeps colors bright!).
- Pour batter into pan. Bake 45–55 mins—until golden and a toothpick comes out clean.
- Cool in pan 15 mins, then transfer to a wire rack.
- Glaze: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and 1 tsp milk; beat until creamy. Add more milk if needed for drizzle consistency. Pour over cooled loaf. Immediately sprinkle with extra jimmies. Let set 10 mins before slicing.
