Ingredients
• 1 cup apple cider (reduced to ½ cup – simmer 1 cup for 15–20 mins)
• ⅓ cup maple syrup or honey
• ¼ cup melted butter or coconut oil
• 1 egg
• 1 tsp vanilla extract
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• ½ cup oat flour (for tenderness)
• 1 tsp baking soda
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ¼ tsp ginger
• ¼ tsp salt
• Optional: ½ cup chopped apples or walnuts
Instructions
- Reduce the cider: Simmer 1 cup apple cider in a small saucepan over medium heat for 15–20 minutes until reduced to ½ cup. Let cool slightly.
- Preheat oven to 350°F (175°C). Grease an 8×4-inch loaf pan or line with parchment paper.
- In a bowl, whisk together reduced cider, maple syrup, melted butter, egg, and vanilla until smooth.
- In another bowl, mix all-purpose flour, oat flour, baking soda, cinnamon, nutmeg, ginger, and salt.
- Add dry ingredients to wet and stir until just combined. Fold in chopped apples or walnuts if using.
- Pour batter into the loaf pan and smooth the top.
- Bake 45–50 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan 10 minutes, then transfer to a wire rack.
✨ Optional glaze: Whisk ½ cup powdered sugar with 1 tbsp apple cider and ½ tsp vanilla. Drizzle over cooled loaf for extra enchantment!
