Enchanting Apple Cider Loaf – A Cozy Slice of Autumn Magic

Ingredients

• 1 cup apple cider (reduced to ½ cup – simmer 1 cup for 15–20 mins)
• ⅓ cup maple syrup or honey
• ¼ cup melted butter or coconut oil
• 1 egg
• 1 tsp vanilla extract
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• ½ cup oat flour (for tenderness)
• 1 tsp baking soda
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ¼ tsp ginger
• ¼ tsp salt
• Optional: ½ cup chopped apples or walnuts


Instructions

  1. Reduce the cider: Simmer 1 cup apple cider in a small saucepan over medium heat for 15–20 minutes until reduced to ½ cup. Let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease an 8×4-inch loaf pan or line with parchment paper.
  3. In a bowl, whisk together reduced cider, maple syrup, melted butter, egg, and vanilla until smooth.
  4. In another bowl, mix all-purpose flour, oat flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Add dry ingredients to wet and stir until just combined. Fold in chopped apples or walnuts if using.
  6. Pour batter into the loaf pan and smooth the top.
  7. Bake 45–50 minutes, until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan 10 minutes, then transfer to a wire rack.

Optional glaze: Whisk ½ cup powdered sugar with 1 tbsp apple cider and ½ tsp vanilla. Drizzle over cooled loaf for extra enchantment!
