Ingredients

• 1 cup vanilla Greek yogurt (or coconut yogurt for dairy-free)
• ½ cup pumpkin puree (unsweetened)
• 2 tbsp maple syrup or honey (divided)
• ½ tsp pumpkin pie spice
• 1 tsp vanilla extract
• 1 cup whipped cream or coconut whipped topping
• ½ cup granola (gluten-free if needed)
• ¼ cup candy corn (optional, for festive flair!)
• Optional: Orange food-safe gel to enhance color


Instructions

  1. In a small bowl, mix pumpkin puree with 1 tbsp maple syrup, pumpkin pie spice, and a drop of food coloring (if desired). Set aside.
  2. In another bowl, stir vanilla extract and remaining 1 tbsp maple syrup into Greek yogurt.
  3. In a third bowl, gently fold half the whipped cream into the yogurt mixture for extra fluffiness.
  4. Layer in clear glasses or jars:
    → First layer: Granola (for crunch!)
    → Second: Vanilla yogurt mixture
    → Third: Pumpkin spiced layer
    → Fourth: Whipped cream
  5. Repeat layers until glasses are full, ending with a swirl of whipped cream on top.
  6. Sprinkle with candy corn and a pinch of cinnamon for a magical finish.
  7. Chill 20 minutes before serving for set layers—or enjoy immediately for a soft, dreamy texture.
