For the crust & topping:
- 2½ cups (315g) all-purpose flour
- ½ cup (100g) granulated sugar
- 1 tsp cinnamon
- ½ tsp salt
- 1 cup (2 sticks / 225g) cold unsalted butter, cubed
- 1 large egg, lightly beaten (for egg wash, optional)
For the apple filling:
- 4 cups peeled and finely diced apples (about 4 medium; Granny Smith or Honeycrisp)
- ¼ cup (50g) granulated sugar
- 2 tbsp brown sugar
- 1½ tbsp all-purpose flour
- 1 tsp cinnamon
- 1 tbsp lemon juice
- Pinch of nutmeg (optional)
Instructions
- Prep: Preheat oven to 375°F (190°C). Line a 9×13″ baking pan with parchment paper, leaving overhang.
- Make crust dough: In a food processor (or bowl), combine flour, ½ cup sugar, 1 tsp cinnamon, and salt. Pulse in cold butter until mixture resembles coarse crumbs with pea-sized butter bits.
- Reserve topping: Set aside 1 cup of the crumb mixture for the top.
- Press base: Press remaining dough evenly into bottom of pan. Bake 10 minutes to par-bake.
- Make filling: While crust bakes, toss apples with sugars, flour, cinnamon, lemon juice, and nutmeg.
- Assemble: Spread apple filling evenly over warm crust. Sprinkle reserved crumb topping over apples.
- Optional egg wash: Brush topping lightly with beaten egg for extra golden shine.
- Bake 35–40 minutes, until topping is golden and apples are tender.
- Cool completely in pan on a wire rack before slicing into bars. Dust with powdered sugar or cinnamon sugar if desired.
