Ingredients
• 2 cups (450g) full-fat cottage cheese (blended until smooth)
• 4 large eggs
• ½ cup (120g) unsweetened applesauce or mashed banana
• ¼ cup (60ml) pure maple syrup or sugar-free syrup
• 1 tsp vanilla extract
• 1½ tsp baking powder
• ¼ tsp salt
• 1½ cups fresh strawberries, chopped (plus extra for topping)
• Optional: 1 tbsp lemon zest for brightness
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan; line with parchment.
- In a blender or food processor, blend cottage cheese until completely smooth (~1–2 min).
- Add eggs, applesauce, maple syrup, and vanilla; blend until combined.
- Transfer to a bowl. Gently fold in baking powder, salt, chopped strawberries, and lemon zest (if using).
- Pour into prepared pan. Top with a few strawberry halves for presentation.
- Bake 45–55 minutes until golden and a toothpick comes out clean (center may be slightly jiggly—will firm as it cools).
- Cool in pan 15 min, then transfer to wire rack. Best served chilled or at room temperature.
