Flourless Strawberry Cottage Cheese Loaf: A Moist, High-Protein, Naturally Gluten-Free Treat

Ingredients

• 2 cups (450g) full-fat cottage cheese (blended until smooth)
• 4 large eggs
• ½ cup (120g) unsweetened applesauce or mashed banana
• ¼ cup (60ml) pure maple syrup or sugar-free syrup
• 1 tsp vanilla extract
• 1½ tsp baking powder
• ¼ tsp salt
• 1½ cups fresh strawberries, chopped (plus extra for topping)
• Optional: 1 tbsp lemon zest for brightness


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan; line with parchment.
  2. In a blender or food processor, blend cottage cheese until completely smooth (~1–2 min).
  3. Add eggs, applesauce, maple syrup, and vanilla; blend until combined.
  4. Transfer to a bowl. Gently fold in baking powder, salt, chopped strawberries, and lemon zest (if using).
  5. Pour into prepared pan. Top with a few strawberry halves for presentation.
  6. Bake 45–55 minutes until golden and a toothpick comes out clean (center may be slightly jiggly—will firm as it cools).
  7. Cool in pan 15 min, then transfer to wire rack. Best served chilled or at room temperature.
