Ingredients (with emojis): 1 1/2 cups fresh strawberries (chopped)
2 cups all-purpose flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
2 large eggs
1/2 cup milk
1/2 cup vegetable oil (or melted butter)
1 tsp vanilla extract
Instructions
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Gently fold in chopped strawberries.
In another bowl, whisk eggs, milk, oil, and vanilla.
Pour wet ingredients into dry and mix until just combined (don’t overmix!).
Divide batter into muffin cups and bake for 18–22 mins, or until a toothpick comes out clean.
Let cool slightly before serving.
