Sweet, golden pineapple rings with a crispy, caramelized crunch in every bite!


Ingredients

1 fresh pineapple (or 1 can of pineapple rings, drained)

½ cup coconut flour (or all-purpose flour)

2 tbsp cornstarch

1 tbsp coconut sugar (optional)

½ tsp cinnamon

Pinch of salt

½ cup sparkling water (or regular water)

Coconut oil for frying


Instructions

If using fresh pineapple, peel, core, and slice into ½-inch rings.

In a bowl, whisk flour, cornstarch, coconut sugar, cinnamon, and salt. Slowly stir in water to form a smooth batter.

Heat coconut oil in a skillet over medium heat.

Dip each pineapple ring in the batter, letting excess drip off.

Fry 2–3 minutes per side until golden and crispy.

Drain on paper towels and serve warm—drizzle with honey or maple syrup if desired!
