Ingredients
¾ cup cottage cheese
2 eggs
1 teaspoon vanilla extract
2 tablespoon butter, melted
½ cup cocoa powder
½ cup powdered allulose
¾ cup oat flour
1 teaspoon baking powder
½ cup chocolate chunks
Instructions
1. Preheat your oven to 350°F and line an 8×8 inch baking dish with parchment paper.
2. In a bowl, combine oat flour, cocoa powder, allulose, and baking powder. In a food processor, blend cottage cheese, eggs, and vanilla until smooth.
3. Mix cottage cheese mixture and melted butter into dry ingredients, then fold in chocolate chunks.
4. Pour batter into the baking dish and bake for 20-25 minutes until a knife comes out clean. Cool completely.
5. Slice into 9 brownies and enjoy!
