Ingredients
• 1 cup all-purpose flour (or gluten-free 1:1 blend)
• 2 tsp baking powder
• ¼ tsp salt
• 1 tbsp granulated sugar
• 1 egg
• ½ cup milk (dairy or plant-based)
• 1 tsp vanilla extract
• Oil for frying (vegetable, canola, or peanut)
For coating:
• ½ cup powdered sugar
• 1 tsp cinnamon (optional)
Instructions
- In a bowl, whisk flour, baking powder, salt, and sugar.
- In another bowl, beat egg, then mix in milk and vanilla until smooth.
- Gradually add wet ingredients to dry, stirring until just combined (batter should be thick but pourable).
- Heat oil to 350°F (175°C) in a deep pot or fryer.
- Use two spoons or a small scoop to drop tablespoon-sized portions of batter into the hot oil. Fry 6–8 at a time, turning once, for 1–2 minutes per side, until golden brown.
- Drain on paper towels.
- While still warm, toss funnel cake bites in a bowl with powdered sugar (and cinnamon if using) until fully coated.
- Serve immediately—they’re best fresh and warm!
