Funnel Cake Bites Recipe

Ingredients

• 1 cup all-purpose flour (or gluten-free 1:1 blend)
• 2 tsp baking powder
• ¼ tsp salt
• 1 tbsp granulated sugar
• 1 egg
• ½ cup milk (dairy or plant-based)
• 1 tsp vanilla extract
• Oil for frying (vegetable, canola, or peanut)

For coating:
• ½ cup powdered sugar
• 1 tsp cinnamon (optional)


Instructions

  1. In a bowl, whisk flour, baking powder, salt, and sugar.
  2. In another bowl, beat egg, then mix in milk and vanilla until smooth.
  3. Gradually add wet ingredients to dry, stirring until just combined (batter should be thick but pourable).
  4. Heat oil to 350°F (175°C) in a deep pot or fryer.
  5. Use two spoons or a small scoop to drop tablespoon-sized portions of batter into the hot oil. Fry 6–8 at a time, turning once, for 1–2 minutes per side, until golden brown.
  6. Drain on paper towels.
  7. While still warm, toss funnel cake bites in a bowl with powdered sugar (and cinnamon if using) until fully coated.
  8. Serve immediately—they’re best fresh and warm!
