2 cups sugar
4 eggs
1 tsp vanilla extract
4 oz German sweet chocolate (melted & cooled)
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup buttermilk
1 cup chopped pecans
Topping (optional but heavenly): 1/2 cup shredded coconut
1/2 cup chopped pecans
1/2 cup sweetened condensed milk
Melted chocolate drizzle
Instructions
Preheat oven to 325°F (163°C). Grease and flour a bundt or loaf pan.
Cream butter and sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla and melted chocolate.
Mix dry ingredients separately, then alternate adding with buttermilk.
Fold in pecans and pour batter into prepared pan.
Bake 60–70 mins or until toothpick comes out clean.
Cool completely before topping.
Mix topping ingredients and drizzle over cooled cake.
