Gingerbread Tree Cookies – A Festive Holiday Favorite

Ingredients

• 1 cup all-purpose flour (or gluten-free 1:1 blend)
• 2 tbsp almond flour (for tenderness)
• ¼ tsp baking soda
• ½ tsp ground ginger
• ½ tsp cinnamon
• ¼ tsp nutmeg
• Pinch of cloves
• Pinch of salt
• 2 tbsp molasses or maple syrup
• 2 tbsp coconut oil or butter, softened
• 2 tbsp brown sugar or coconut sugar
• 1 egg yolk (or flax yolk: 1 tbsp ground flax + 3 tbsp water)
• ½ tsp vanilla extract
• Optional: Green food-safe gel, royal icing, sprinkles, or edible glitter for decorating


Instructions

  1. In a bowl, whisk together flours, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  2. In another bowl, beat coconut oil, sugar, molasses, egg yolk, and vanilla until smooth.
  3. Gradually add dry ingredients and mix until a soft dough forms.
  4. Wrap dough in plastic and chill 30 minutes (makes rolling easier).
  5. Preheat oven to 350°F (175°C). Roll out dough on a floured surface to ¼-inch thickness.
  6. Use tree-shaped cookie cutters to cut into festive shapes. Place on a parchment-lined baking sheet.
  7. Bake 8–10 minutes, until edges are firm.
  8. Let cool completely before decorating.
  9. Decorate! Use green-tinted frosting, piped icing, or sprinkle with “snow” (powdered sugar). Add candy ornaments, silver dragees, or sparkles for magic!
