Ingredients
• 1 cup all-purpose flour (or gluten-free 1:1 blend)
• 2 tbsp almond flour (for tenderness)
• ¼ tsp baking soda
• ½ tsp ground ginger
• ½ tsp cinnamon
• ¼ tsp nutmeg
• Pinch of cloves
• Pinch of salt
• 2 tbsp molasses or maple syrup
• 2 tbsp coconut oil or butter, softened
• 2 tbsp brown sugar or coconut sugar
• 1 egg yolk (or flax yolk: 1 tbsp ground flax + 3 tbsp water)
• ½ tsp vanilla extract
• Optional: Green food-safe gel, royal icing, sprinkles, or edible glitter for decorating
Instructions
- In a bowl, whisk together flours, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
- In another bowl, beat coconut oil, sugar, molasses, egg yolk, and vanilla until smooth.
- Gradually add dry ingredients and mix until a soft dough forms.
- Wrap dough in plastic and chill 30 minutes (makes rolling easier).
- Preheat oven to 350°F (175°C). Roll out dough on a floured surface to ¼-inch thickness.
- Use tree-shaped cookie cutters to cut into festive shapes. Place on a parchment-lined baking sheet.
- Bake 8–10 minutes, until edges are firm.
- Let cool completely before decorating.
- Decorate! Use green-tinted frosting, piped icing, or sprinkle with “snow” (powdered sugar). Add candy ornaments, silver dragees, or sparkles for magic!
