Ingredients
1 cup almond flour
¼ cup coconut flour
1 tsp baking powder
½ tsp baking soda
2 tsp ground cinnamon
Pinch of salt
½ cup mashed cooked apples or unsweetened applesauce (about 1 small apple)
¼ cup maple syrup, honey, or powdered erythritol (for low-carb option)
¼ cup melted coconut oil or butter
2 large eggs
½ tsp vanilla extract
Optional: Crushed pecans or extra cinnamon for topping
Instructions
Preheat oven to 350°F (175°C). Line an 8×4-inch loaf pan with parchment paper.
In a bowl, mix almond flour , coconut flour , baking powder , baking soda , cinnamon , and salt until well combined.
In another bowl, whisk mashed apple or applesauce , sweetener , melted oil , eggs , and vanilla until smooth.
Gradually mix wet ingredients into dry ingredients until just combined (don’t overmix!).
Spoon batter into the loaf pan and smooth the top.
Optional: Sprinkle crushed pecans or extra cinnamon on top before baking.
Bake for 30–35 minutes or until golden and a toothpick comes out clean.
Let cool completely before slicing — enjoy warm or chilled with a dollop of whipped cream or Greek yogurt.
