Ingredients
• 1 (15.25 oz) box white or yellow cake mix
• 2 large eggs
• ⅓ cup neutral oil (e.g., avocado or melted coconut)
• 1 tsp lime zest (key for that “Grinch-y” tang!)
• ½ tsp lime extract (optional but fun!)
• Green gel food coloring (a few drops — gel avoids thinning batter)
• ¾ cup white chocolate chips or baking chips
• Pinch of salt (if cake mix is unsalted)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- In a bowl, whisk eggs, oil, lime zest, extract (if using), and food coloring until bright green.
- Add cake mix and salt (if needed); stir until a thick, soft dough forms. Fold in white chips.
- Scoop 1½-tbsp balls (no need to flatten—they’ll spread slightly). Space 2″ apart.
- Bake 9–11 mins—edges set, centers still soft. Cool 5 mins on sheet before transferring.
