Ingredients

• 2 cups all-purpose flour • 2 tbsp sugar • 2 tsp baking powder • 1 tsp baking soda • ½ tsp salt • 1½ cups buttermilk • 2 eggs • 2 tbsp melted butter • 2 tbsp fresh lemon juice • 1 tsp lemon zest • Orange and purple food coloring • Halloween sprinkles • Candy eyeballs • Black decorating gel


Instructions

  1. In large bowl, whisk together flour, sugar, baking powder, baking soda, and salt
  2. In separate bowl, whisk buttermilk, eggs, melted butter, lemon juice, and lemon zest
  3. Pour wet ingredients into dry ingredients
  4. Stir until just combined (batter should be lumpy)
  5. Divide batter into thirds
  6. Leave one third plain, add orange coloring to one third, purple to last third
  7. Heat griddle or skillet over medium heat
  8. Drop different colored batters onto griddle to create swirled pancakes
  9. Cook until bubbles form on surface, 2-3 minutes
  10. Flip and cook 1-2 minutes more until golden
  11. Serve hot with butter and maple syrup
  12. Decorate with Halloween sprinkles, candy eyeballs, and black gel
