Ingredients
• 2 cups all-purpose flour • 2 tbsp sugar • 2 tsp baking powder • 1 tsp baking soda • ½ tsp salt • 1½ cups buttermilk • 2 eggs • 2 tbsp melted butter • 2 tbsp fresh lemon juice • 1 tsp lemon zest • Orange and purple food coloring • Halloween sprinkles • Candy eyeballs • Black decorating gel
Instructions
- In large bowl, whisk together flour, sugar, baking powder, baking soda, and salt
- In separate bowl, whisk buttermilk, eggs, melted butter, lemon juice, and lemon zest
- Pour wet ingredients into dry ingredients
- Stir until just combined (batter should be lumpy)
- Divide batter into thirds
- Leave one third plain, add orange coloring to one third, purple to last third
- Heat griddle or skillet over medium heat
- Drop different colored batters onto griddle to create swirled pancakes
- Cook until bubbles form on surface, 2-3 minutes
- Flip and cook 1-2 minutes more until golden
- Serve hot with butter and maple syrup
- Decorate with Halloween sprinkles, candy eyeballs, and black gel
