Ingredients
For the shells:
• 1 ½ cups (150g) almond flour (finely ground, sifted)
• ½ cup (60g) powdered erythritol or confectioners’ sugar
• 2 large egg whites (room temperature)
• ⅛ tsp cream of tartar
• 2–3 drops black food gel (or orange, purple)
• Halloween sprinkles (optional, for decorating)
For the filling:
• ¼ cup cream cheese (softened)
• 2 tbsp powdered sweetener
• 1 tbsp unsweetened almond milk
• ½ tsp vanilla extract
• Orange or black food coloring (optional)
Instructions
- Sift almond flour and powdered sweetener into a bowl. Set aside.
- In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add in dry ingredients and beat until stiff, glossy peaks form.
- Gently fold in food coloring until evenly colored (black, orange, or purple for Halloween!).
- Transfer batter to a piping bag with a round tip. Pipe 1-inch circles onto a parchment-lined baking sheet.
- Tap tray firmly on counter to release air bubbles. Let sit 30 minutes to form a skin.
- Preheat oven to 300°F (150°C). Bake 16–18 minutes until firm. Cool completely.
- For filling: beat cream cheese, sweetener, almond milk, vanilla, and food coloring until smooth.
- Pipe or spread filling onto one shell and sandwich with another.
- Decorate with spooky sprinkles or edible eyes for extra fun!
