Halloween Macarons: Spooky, Elegant Treats for Your Haunted Holiday Spread

Ingredients

For the shells:
• 1 ½ cups (150g) almond flour (finely ground, sifted)
• ½ cup (60g) powdered erythritol or confectioners’ sugar
• 2 large egg whites (room temperature)
• ⅛ tsp cream of tartar
• 2–3 drops black food gel (or orange, purple)
• Halloween sprinkles (optional, for decorating)

For the filling:
• ¼ cup cream cheese (softened)
• 2 tbsp powdered sweetener
• 1 tbsp unsweetened almond milk
• ½ tsp vanilla extract
• Orange or black food coloring (optional)


Instructions

  1. Sift almond flour and powdered sweetener into a bowl. Set aside.
  2. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  3. Gradually add in dry ingredients and beat until stiff, glossy peaks form.
  4. Gently fold in food coloring until evenly colored (black, orange, or purple for Halloween!).
  5. Transfer batter to a piping bag with a round tip. Pipe 1-inch circles onto a parchment-lined baking sheet.
  6. Tap tray firmly on counter to release air bubbles. Let sit 30 minutes to form a skin.
  7. Preheat oven to 300°F (150°C). Bake 16–18 minutes until firm. Cool completely.
  8. For filling: beat cream cheese, sweetener, almond milk, vanilla, and food coloring until smooth.
  9. Pipe or spread filling onto one shell and sandwich with another.
  10. Decorate with spooky sprinkles or edible eyes for extra fun!
