Ingredients
• 1 cup (2 sticks) unsalted butter, softened (or vegan butter)
• ¾ cup granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 2 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• ½ tsp baking powder
• ¼ tsp salt
• Food coloring (orange, black, purple)
• Halloween sprinkles, icing, candy eyes (for decorating)
Optional: Easy powdered sugar icing
• 1 cup powdered sugar
• 1–2 tbsp milk or almond milk
• ½ tsp vanilla extract
Instructions
- In a large bowl, beat butter and sugar until light and fluffy (2–3 mins).
- Beat in egg and vanilla until smooth.
- In another bowl, whisk flour, baking powder, and salt. Gradually add to butter mixture, mixing until a soft dough forms.
- Divide dough into bowls and tint with Halloween colors if desired (or keep plain for decorating later).
- Wrap dough in plastic and chill 30 minutes (makes rolling easier).
- Preheat oven to 350°F (175°C). Roll out dough on a floured surface to ¼-inch thickness.
- Use Halloween-shaped cutters (bats, ghosts, pumpkins, witches) to cut cookies.
- Place on a parchment-lined baking sheet and bake 8–10 minutes, until edges are lightly golden.
- Let cool completely before decorating.
- Decorate! Use icing to pipe details, then add sprinkles, candy eyes, or draw spooky faces.
