A tropical twist on a classic—moist, spiced cake loaded with carrots, pineapple, and a creamy frosting!


Ingredients

For the Cake:

1 ½ cups flour

1 tsp baking soda

1 tsp cinnamon

½ tsp salt

2 eggs

1 cup vegetable oil

1 cup brown sugar

1 tsp vanilla extract

1 cup finely grated carrots

1 cup crushed pineapple, drained

½ cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract


Instructions

Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

In a large bowl, mix flour, baking soda, cinnamon, and salt.

In another bowl, whisk eggs, oil, brown sugar, and vanilla until smooth.

Stir in grated carrots, pineapple, and nuts (if using).

Gradually add the dry ingredients to the wet mixture and stir until combined.

Pour the batter into the prepared baking dish and bake for 30–35 minutes, or until a toothpick comes out clean.

Cool completely before frosting.

For the frosting: Beat together cream cheese, butter, powdered sugar, and vanilla until smooth.

Spread frosting over cooled cake and serve!
