Hawaiian Pineapple Cake: A Tropical Dessert That Brings Sunshine to Your Table

Ingredients

• 1 box yellow cake mix • 1 can (20oz) crushed pineapple, drained • 1 cup flaked coconut • 4 eggs • ½ cup vegetable oil • 1 tsp vanilla extract

FOR FROSTING: • 8 oz cream cheese, softened • ¼ cup butter, softened • 2 cups powdered sugar • 1 tsp vanilla extract • ¼ cup flaked coconut for garnish


Instructions

  1. Preheat oven to 350°F
  2. Grease and flour 9×13 inch baking pan
  3. In large bowl, mix cake mix and drained pineapple
  4. Add eggs, oil, and vanilla, beat well
  5. Fold in flaked coconut
  6. Pour into prepared pan
  7. Bake 35-40 minutes until toothpick comes clean
  8. Cool completely before frosting
  9. Beat cream cheese and butter until smooth
  10. Gradually add powdered sugar and vanilla
  11. Spread frosting over cooled cake
  12. Sprinkle with additional coconut
  13. Store covered in refrigerator
