Ingredients
• 1 can (20oz) crushed pineapple, drained • 1 cup whipped topping (cool whip) • ½ cup sweetened shredded coconut • 1 package (3.4oz) instant vanilla pudding mix • 1 cup milk • ¼ cup maraschino cherries, drained and halved • 2 tbsp chopped nuts (optional)
Instructions
- Prepare vanilla pudding according to package directions
- Using hand mixer, beat pudding for 2 minutes until fluffy
- Fold in whipped topping gently but thoroughly
- Stir in crushed pineapple and sweetened coconut
- Fold in maraschino cherries and nuts if using
- Transfer to serving bowl or individual cups
- Refrigerate 2 hours to set and blend flavors
- Stir gently before serving
- Garnish with extra coconut and cherries if desired
