Ingredients

• 1 can (20oz) crushed pineapple, drained • 1 cup whipped topping (cool whip) • ½ cup sweetened shredded coconut • 1 package (3.4oz) instant vanilla pudding mix • 1 cup milk • ¼ cup maraschino cherries, drained and halved • 2 tbsp chopped nuts (optional)


Instructions

  1. Prepare vanilla pudding according to package directions
  2. Using hand mixer, beat pudding for 2 minutes until fluffy
  3. Fold in whipped topping gently but thoroughly
  4. Stir in crushed pineapple and sweetened coconut
  5. Fold in maraschino cherries and nuts if using
  6. Transfer to serving bowl or individual cups
  7. Refrigerate 2 hours to set and blend flavors
  8. Stir gently before serving
  9. Garnish with extra coconut and cherries if desired
