Hawaiian Pineapple Coconut Fluff

Ingredients

• 1 (20 oz) can crushed pineapple, well-drained (reserve 2 tbsp juice for optional glaze)
• 1 (8 oz) tub whipped topping (like Cool Whip), thawed
• ½ cup sweetened shredded coconut
• ½ cup mini marshmallows
• ½ cup chopped macadamia nuts or pecans (optional)
• Optional: 1 cup mini vanilla wafers or crushed pineapple cake cubes
Optional glaze (for shine):
• Reserved pineapple juice + ½ tsp cornstarch, simmered 2 min until thickened

Instructions

  1. In a large bowl, gently fold together drained pineapple, whipped topping, coconut, marshmallows, and nuts (if using).
  2. If adding wafers or cake cubes, fold in just before serving to maintain texture.
  3. Spoon into a serving bowl or individual cups.
  4. Chill at least 1 hour to meld flavors and firm up.
  5. Optional: Drizzle with warm pineapple glaze before serving.
  6. Garnish with extra coconut or a maraschino cherry if desired!
