Ingredients
• ½ cup (125g) almond butter or natural peanut butter (runny, no added sugar)
• ¼ cup pure maple syrup or sugar-free maple-flavored syrup
• 1 tsp vanilla extract
• ¼ tsp sea salt
• ¾ cup (95g) oat flour (or blend rolled oats until fine)
• ⅓ cup mini dark chocolate chips (at least 70% cacao, or sugar-free chips)
• Optional: 2 tbsp chopped nuts, flax seeds, or freeze-dried berries
Instructions
- Line an 8×8″ pan or small baking sheet with parchment paper.
- In a bowl, stir almond butter, maple syrup, vanilla, and salt until smooth.
- Add oat flour; mix until a soft, pliable dough forms. Fold in chocolate chips and any extras.
- Press mixture evenly into pan (about ¼” thick). Smooth top with wet spatula or hands.
- Chill at least 1 hour (or freeze 30 min) until firm.
- Break into rustic shards or cut into squares. Store in fridge up to 2 weeks or freeze for longer shelf life.
