Ingredients
• 2 ripe bananas (mashed)
• 1 cup rolled oats (gluten-free if needed)
• ¼ cup almond butter or peanut butter
• 1 tsp cinnamon
• ½ tsp vanilla extract
• Optional add-ins: dark chocolate chips, raisins, chopped nuts, or shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mash bananas well. Stir in oats, almond butter, cinnamon, and vanilla. Mix until fully combined.
- Fold in any optional add-ins if using.
- Scoop tablespoon-sized portions onto the baking sheet and flatten slightly with a fork.
- Bake 12–15 minutes, until edges are golden brown.
- Let cool on the tray for 5 minutes—the cookies will firm up as they cool.
- Transfer to a wire rack and enjoy warm or at room temperature!
