Decadent, nutty, and rich with chocolate and hazelnut flavor — these keto fat bombs are a healthy twist on the classic Ferrero Rocher chocolates, made without flour or sugar!
Ingredients
1 cup raw hazelnuts (or almonds for a more affordable option)
¼ cup unsweetened cocoa powder
¼ cup powdered erythritol or monk fruit sweetener
2 tbsp melted coconut oil or grass-fed butter
2 tbsp heavy cream or full-fat coconut cream
¼ tsp vanilla extract
Pinch of salt
Optional: crushed hazelnuts or shredded coconut for rolling
Instructions
In a food processor, pulse hazelnuts until finely ground (not too smooth).
Add cocoa powder, powdered sweetener, coconut oil, heavy cream, vanilla, and salt. Pulse until a soft, sticky dough forms.
Scoop small portions and roll into balls using your hands.
Optional: Roll each ball in crushed hazelnuts, cacao nibs, or shredded coconut for extra texture and presentation.
Place on a tray and chill in the fridge or freezer for 15–20 minutes to firm up.
