Healthy Pumpkin Cake – A Guilt-Free Fall Dessert

Ingredients

• 1 cup pumpkin puree (unsweetened)
• ⅓ cup pure maple syrup or honey
• ¼ cup melted coconut oil or olive oil
• 1 egg (or flax egg for vegan: 1 tbsp ground flax + 3 tbsp water)
• 1 tsp vanilla extract
• 1 cup almond flour
• ½ cup oat flour (gluten-free if needed)
• 1 tsp baking soda
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ¼ tsp ginger
• ¼ tsp salt
• Optional: ¼ cup chopped walnuts or dark chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round or square baking pan or line with parchment paper.
  2. In a large bowl, whisk together pumpkin, maple syrup, melted oil, egg, and vanilla until smooth.
  3. In another bowl, mix almond flour, oat flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Add dry ingredients to wet and stir until just combined. Fold in nuts or chocolate chips if using.
  5. Pour batter into the pan and smooth the top.
  6. Bake 25–28 minutes, until a toothpick inserted in the center comes out clean.
  7. Let cool completely before slicing. Optionally dust with powdered erythritol or serve with a dollop of Greek yogurt.
