2 cups mixed dried fruits (raisins, cherries, apricots)

1/3 cup maple syrup

1/4 cup coconut oil, melted

1 1/2 cups whole wheat flour

Instructions

Preheat oven to 350°F (175°C) and grease a loaf pan.

In a bowl, whisk eggs, applesauce, maple syrup, coconut oil, and vanilla.

In another bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.

Fold dry ingredients into wet ingredients until just combined.

Stir in mixed fruits and nuts.

Pour batter into the prepared loaf pan and smooth the top.

Bake for 50–60 minutes or until a toothpick inserted comes out clean.
