Heavenly Moist Fruitcake – Rich, Fruity, and Perfectly Moist

Ingredients

  • 2 cups mixed dried fruits (raisins, cherries, apricots)

  • 1/2 cup chopped nuts (walnuts or pecans)

  • 1/2 cup unsweetened applesauce

  • 1/3 cup maple syrup

  • 1/4 cup coconut oil, melted

  • 2 large eggs

  • 1 1/2 cups whole wheat flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp salt

  • Optional: 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.

  2. In a bowl, whisk eggs, applesauce, maple syrup, coconut oil, and vanilla.

  3. In another bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.

  4. Fold dry ingredients into wet ingredients until just combined.

  5. Stir in mixed fruits and nuts.

  6. Pour batter into the prepared loaf pan and smooth the top.

  7. Bake for 50–60 minutes or until a toothpick inserted comes out clean.

  8. Let cool completely before slicing and serving.
