Ingredients
• 1 cup granulated sugar
• 6 tbsp unsalted butter, cubed (or coconut oil)
• ½ cup heavy cream or full-fat coconut milk (room temperature)
• 1 tsp vanilla extract
• ½–1 tsp flaky sea salt (to taste)
Instructions
- In a medium saucepan over medium heat, melt sugar without stirring. Swirl the pan gently as it melts to an amber color (5–7 minutes). Watch closely—it burns fast!
- Once sugar is fully melted and golden-amber, carefully add butter. Whisk until melted and blended (mixture will bubble).
- Slowly pour in heavy cream while whisking constantly (it will bubble vigorously).
- Cook 1–2 more minutes until smooth and slightly thickened.
- Remove from heat. Stir in vanilla and sea salt. Start with ½ tsp salt and add more to taste.
- Let cool 10–15 minutes before using. The sauce will thicken as it cools.
