Ingredients
• 1 (5–7 lb) fully cooked bone-in ham (or spiral-cut)
• 1 cup apple cider (reduced to ½ cup – simmer 20 mins)
• ¼ cup honey
• 2 tbsp Dijon mustard
• 1 tbsp apple cider vinegar
• 1 tsp smoked paprika
• ½ tsp garlic powder
• ½ tsp onion powder
• Pinch of cayenne (optional, for heat)
• Fresh thyme or rosemary (for garnish)
Instructions
- Preheat oven to 325°F (160°C). Place ham in a roasting pan, cut-side down. Score the surface in a diamond pattern if not pre-sliced.
- Make the glaze: In a small saucepan, reduce apple cider to ½ cup over medium heat (about 15–20 minutes). Remove from heat.
- Stir in honey, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, onion powder, and cayenne (if using). Mix until smooth and glossy.
- Brush half the glaze generously over the ham. Reserve the rest for basting.
- Cover ham loosely with foil and bake 1.5–2 hours (about 10–12 mins per pound), until internal temperature reaches 135°F (57°C).
- Remove foil, brush with remaining glaze, and increase heat to 375°F (190°C). Roast 15–20 minutes more until caramelized and golden.
- Let rest 15 minutes before slicing. Garnish with fresh herbs.
