Tropical fruits, cozy spices, and a soft crumb make every bite heavenly!
Ingredients
2 ripe bananas, mashed
1 cup crushed pineapple (drained)
½ cup maple syrup
⅓ cup melted coconut oil
2 eggs
1 tsp vanilla extract
1 ½ cups whole wheat or all-purpose flour
1 tsp baking soda
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
½ cup chopped pecans or walnuts (optional)
½ cup shredded coconut (optional)
Instructions
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, mix bananas, pineapple, syrup, oil, eggs, and vanilla.
In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
Combine wet and dry ingredients, stir in nuts and coconut if using.
Pour batter into pan and bake for 50–60 min or until a toothpick comes out clean.
Cool before slicing.
