Ingredients
1½ cups flour (all-purpose or whole wheat)
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
1 tsp ground cinnamon
2 ripe bananas, mashed
½ cup crushed pineapple, drained
2 large eggs
½ cup coconut oil or butter, melted
⅓ cup maple syrup or brown sugar
1 tsp vanilla extract
½ cup chopped walnuts or pecans (optional)
½ cup shredded coconut (optional)
Instructions
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
In another bowl, combine mashed bananas, pineapple, eggs, melted coconut oil (or butter), maple syrup (or sugar), and vanilla.
Stir wet ingredients into dry ingredients until just combined.
Fold in nuts and coconut if using.
Pour batter into prepared pan and bake for 50–60 minutes, until golden and a toothpick comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack.
