Ingredients
For the Cake:
1¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
1½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
1½ cups granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup Irish cream (like Baileys®)
½ cup strong brewed coffee, cooled
For the Frosting:
1 cup unsalted butter, softened
3½ cups powdered sugar
¾ cup Irish cream
1 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a bowl, whisk flour, cocoa powder, baking soda, and salt; set aside.
In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
Gradually add dry ingredients, alternating with Irish cream, beginning and ending with dry ingredients.
Stir in coffee just before pouring batter into pans.
Bake 28–32 minutes or until a toothpick comes out clean. Let cool completely.
For frosting: Beat butter until creamy. Gradually add powdered sugar, Irish cream, vanilla, and salt. Mix until smooth and fluffy.
Frost between layers and on top of cooled cake. Slice and enjoy!
