Kentucky Butter Cake Cookies – Soft, Buttery, and Melt-in-Your-Mouth Delicious ✨

Ingredients

• ½ cup (1 stick) unsalted butter, softened
• ¾ cup granulated sugar
• 1 egg
• 1 tsp vanilla extract
• 1 ¾ cups all-purpose flour
• ½ tsp baking powder
• ¼ tsp salt
• 2 tbsp milk (dairy or plant-based)

For the butter glaze:
• ¼ cup (½ stick) unsalted butter, melted
• 1 cup powdered sugar
• 1–2 tbsp milk or cream
• ½ tsp vanilla extract
• Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
  3. Beat in egg and vanilla until smooth.
  4. In another bowl, whisk flour, baking powder, and salt. Gradually add to wet ingredients, alternating with milk. Mix until just combined.
  5. Scoop tablespoon-sized balls of dough and place on trays (they spread slightly).
  6. Bake 9–11 minutes, until edges are golden but centers are soft.
  7. Let cool on the tray 5 minutes—they’ll firm up as they cool.

Make the glaze:
8. While cookies cool, whisk melted butter, powdered sugar, 1 tbsp milk, vanilla, and salt. Add more milk for a thinner drizzle.
9. Dip the top of each cookie into the glaze or drizzle generously.
10. Let set 5–10 minutes before serving.

These are delicate, buttery, and perfect with coffee or tea!
