Description

A low-carb twist on the classic 7-Layer Bar — these Keto Buster Bars are loaded with flavor, texture, and all your favorite sweet & salty fixings!


Ingredients

For the Crust:

1 cup almond flour
¼ cup powdered erythritol or monk fruit sweetener
¼ cup melted coconut oil
For the Layers:

½ cup sugar-free chocolate chips
½ cup chopped roasted peanuts or pecans
¼ cup shredded unsweetened coconut
¼ cup mini sugar-free marshmallows
2 tbsp caramel sugar-free syrup (or keto dulce de leche)
2 tbsp heavy cream or melted dark chocolate for drizzle (optional)


Instructions

Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
In a bowl, mix almond flour and sweetener. Stir in melted coconut oil until crumbly.
Press half of the mixture into the bottom of the pan as your base.
Layer chocolate chips, nuts, coconut, and marshmallows evenly over the crust.
Drizzle caramel syrup over the top. Optional: Drizzle with melted chocolate or heavy cream for extra richness.
Sprinkle remaining crust mixture over the top.
Bake for 15–18 minutes until lightly golden.
Let cool completely before slicing into bars. Chill for easier cutting.
